Black Bean Enchiladas

I've never actually followed the recipe so I don't know how close the measurements are... I just add until it tastes good.
These are soo good, my meat loving husband likes them too.

  • 1pkg tortillas ( I use fajita size, I have also used wheat)
  • enchilada sauce
  • 4c black beans -- cooked
  • 2c corn
  • 2c brown rice -- cooked
  • 1/4c onion -- chopped fine
  • 2tsp chili powder
  • 3tbsp tomato paste
  • garlic powder
  • black pepper
Saute onions until soft.
Mix beans, corn, rice, tomato paste and chili powder.
Spoon into tortillas.
Roll them up and put into a casserole pan.
Pour enchilada sauce over the top.
Bake for 15 - 20 minutes at 350.
