spinach artichoke dip

Serves: 8

Ingredients:
  • 3/4 cup grated Parmesan cheese
  • 2/3 cup nonfat plain yogurt
  • 1/2 cup nonfat Greek yogurt
  • 1/3 cup reduced fat mayonnaise
  • 1 clove garlic, minced
  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 2 tablespoons sliced onions
  • 1 cup chopped spinach, cooked and drained
  • 1/2 cup part-skim mozzarella


Cooking instructions:

  1. In a microwave safe bowl, stir together Parmesan cheese, yogurts, mayonnaise, and garlic.
  2. Add artichokes, spinach, and mozzarella. Stir until blended.
  3. Heat in microwave on high for about 3 minutes or until fully heated, stirring halfway through.
  4. Stir before serving and sprinkle onions on top.

Per serving (1/4 cup): 110 calories, 5 g fat, 6 g carbohydrate, 1.2 g fiber, 9 g protein, 240 mg calcium (20% daily need)
