Citrus Salmon Over Spinach

Total time: 30 minutes












Ingredients:
  • ½ cup fresh spinach (uncooked)
  • 1 5-ounce salmon filet
  • 2 tablespoons sesame seeds
  • ¼ cup light soy sauce
  • 2 tablespoons orange juice
  • 1 tablespoon mustard
  • ¼ teaspoon each: garlic powder, salt, and pepper
  • 5 mini cherry or grape tomatoes
  • 1 bunch basil leaves
  • ½ grapefruit (or orange), sliced


Cooking instructions:

  1. Preheat oven to 375˚F.
  2. Place spinach leaves in a casserole dish and lay salmon on top.
  3. In a small cup or bowl, mix the sesame seeds, soy sauce, orange juice, mustard, garlic powder, salt, and pepper. Pour over the fish.
  4. Place tomatoes, basil, and grapefruit in Pyrex surrounding the fish.
  5. Bake for about 20 minutes, until fish is browned. (If you’re really in a rush, you can raise the oven to 400˚F and cook for a shorter time; just keep an eye on it so the fish doesn’t dry out).
