Ingredients:
- ½ cup fresh spinach (uncooked)
- 1 5-ounce salmon filet
- 2 tablespoons sesame seeds
- ¼ cup light soy sauce
- 2 tablespoons orange juice
- 1 tablespoon mustard
- ¼ teaspoon each: garlic powder, salt, and pepper
- 5 mini cherry or grape tomatoes
- 1 bunch basil leaves
- ½ grapefruit (or orange), sliced
Cooking instructions:
- Preheat oven to 375˚F.
- Place spinach leaves in a casserole dish and lay salmon on top.
- In a small cup or bowl, mix the sesame seeds, soy sauce, orange juice, mustard, garlic powder, salt, and pepper. Pour over the fish.
- Place tomatoes, basil, and grapefruit in Pyrex surrounding the fish.
- Bake for about 20 minutes, until fish is browned. (If you’re really in a rush, you can raise the oven to 400˚F and cook for a shorter time; just keep an eye on it so the fish doesn’t dry out).
