Ingredients:
- 1½ pounds skinless, boneless chicken breast
- 1 tablespoon olive oil
- 1 large onion, thinly sliced
- 1 (8-ounce) can stewed tomatoes
- 1 (8-ounce) can tomato sauce
- 2 large green bell peppers, sliced
- 4 cloves garlic, crushed
- 1 cup celery, sliced
- 1 cup carrots, diced
- 1 cup fresh mushrooms, sliced
- ½ teaspoon basil
- ½ teaspoon oregano
- Salt and pepper to taste
Cooking instructions:
- Brown chicken on all sides in olive oil in a skillet. Add onion and cook until tender.
- Transfer browned chicken and onion to the refrigerator and store until ready to begin cooking in the crock-pot. (You can do these first two steps and all the veggie chopping the night before if you wish, so it’s easy to assemble in the morning.)
- Combine stewed tomatoes (cut up any large tomato chunks in the can into bite-sized pieces) with tomato sauce. Then combine all ingredients in the crock pot.
- Cook on low approximately 7-9 hours, according to your crock pot instructions. Dish into bowls and enjoy!
