Crock Pot Chicken Cacciatore

7-9 hours (while you’re at work)









Ingredients:
  • 1½ pounds skinless, boneless chicken breast
  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 1 (8-ounce) can stewed tomatoes
  • 1 (8-ounce) can tomato sauce
  • 2 large green bell peppers, sliced
  • 4 cloves garlic, crushed
  • 1 cup celery, sliced
  • 1 cup carrots, diced
  • 1 cup fresh mushrooms, sliced
  • ½ teaspoon basil
  • ½ teaspoon oregano
  • Salt and pepper to taste


Cooking instructions:

  1. Brown chicken on all sides in olive oil in a skillet. Add onion and cook until tender.
  2. Transfer browned chicken and onion to the refrigerator and store until ready to begin cooking in the crock-pot. (You can do these first two steps and all the veggie chopping the night before if you wish, so it’s easy to assemble in the morning.)
  3. Combine stewed tomatoes (cut up any large tomato chunks in the can into bite-sized pieces) with tomato sauce. Then combine all ingredients in the crock pot.
  4. Cook on low approximately 7-9 hours, according to your crock pot instructions. Dish into bowls and enjoy!
