Crunch Slaw Salad

This salad is chock full of nutrition — it provides a filling dose of fiber and delivers over 100% of your daily needs for vitamins A and C. The heart healthy fat in the sunflower seeds will also help keep you feeling full. Pair it with half a turkey sandwich on whole wheat bread and you’re good to go for the afternoon.

Serves: 2
Total time: 5 minutes

Ingredients:
  • 2 cups pre-packaged broccoli slaw (without dressing or sauce)
  • 1 cup parsley, finely chopped
  • ¼ cup sunflower seeds


Instructions:

  1. Place parsley in mixing bowl.
  2. Add the broccoli slaw and sunflower seeds, then toss everything together.
  3. Add a light dressing. I recommend an Asian style dressing like Newman’s Own All Natural Salad Mist, Asian Sesame — just 1 calorie per spray (a serving is 10 sprays).

Per serving (about 1½ cups of salad plus Newman’s dressing): 140 calories, 9 g fat, 1 g saturated fat, 10 g carbohydrate, 4.5 g fiber, 5 g protein, 97 mg sodium, 98 mg vitamin C (160% daily need), 5,320 IU vitamin A (106% daily need)
