Sofia’s Tasty Tuna Wrap

Ingredients:
  • 1 5-ounce can tuna in water
  • 2 tablespoons Dijon mustard
  • 1 teaspoon balsamic vinegar
  • ½ lemon, squeezed
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon dried mint leaves (or fresh)
  • ¼ teaspoon cumin
  • ¼ teaspoon paprika
  • Salt and pepper, to taste
  • 3 walnuts, chopped
  • 6 craisins
  • 1 whole wheat wrap (I like Damascus Bakeries Flax Roll Ups, damascusbakery.com, because they have 9 g fiber, but any brand will do)
  • 2 lettuce leaves
  • ½ tomato, sliced
  • 1 pickle


Instructions:

  1. Open the can of tuna and place in a shallow bowl
  2. Add mustard to tuna and stir with a fork until it’s well incorporated.
  3. Add the rest of the ingredients, except for the walnuts and craisins, and mix well.
  4. Stir in walnuts and craisins.
  5. Lay the wrap out on a sheet of tinfoil. Place lettuce and tomatoes on wrap.
  6. Spread tuna onto wrap evenly and roll up.
  7. Slice in half. Place pickle alongside wrap and cover with tinfoil.
  8. Pack in a brown paper bag along with your snacks and enjoy your gourmet lunch!
