- 1 5-ounce can tuna in water
- 2 tablespoons Dijon mustard
- 1 teaspoon balsamic vinegar
- ½ lemon, squeezed
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon dried mint leaves (or fresh)
- ¼ teaspoon cumin
- ¼ teaspoon paprika
- Salt and pepper, to taste
- 3 walnuts, chopped
- 6 craisins
- 1 whole wheat wrap (I like Damascus Bakeries Flax Roll Ups, damascusbakery.com, because they have 9 g fiber, but any brand will do)
- 2 lettuce leaves
- ½ tomato, sliced
- 1 pickle
Instructions:
- Open the can of tuna and place in a shallow bowl
- Add mustard to tuna and stir with a fork until it’s well incorporated.
- Add the rest of the ingredients, except for the walnuts and craisins, and mix well.
- Stir in walnuts and craisins.
- Lay the wrap out on a sheet of tinfoil. Place lettuce and tomatoes on wrap.
- Spread tuna onto wrap evenly and roll up.
- Slice in half. Place pickle alongside wrap and cover with tinfoil.
- Pack in a brown paper bag along with your snacks and enjoy your gourmet lunch!
