Ingredients:
- 8 ounces lean steak filet
- Non-fat cooking spray
- 1 red or green pepper (stemmed, seeded, sliced into ½ inch strips)
- 1 medium onion (skinned and sliced into ½ inch strips)
- ½ cup sliced mushrooms
- 2 whole wheat tortillas (I like La Tortilla Factory)
- ½ cup shredded iceberg lettuce
- Salsa as desired
- 4-6 tablespoons reduced-fat shredded cheddar cheese
- 1/2 cup nonfat Greek yogurt (as a sour cream substitute)
- 4 tablespoons guacamole
Cooking instructions:
- Heat a pan to medium-high heat and coat with cooking spray.
- Slice steak into strips and sauté until cooked through. Set steak aside.
- Sauté peppers, onions, and mushrooms in the same pan to desired tenderness.
- Place half the steak, peppers, onions, and mushrooms on each tortilla, and put the lettuce, salsa, cheese, yogurt, and guacamole on top. Roll up and enjoy!
