1 cup of rice ($1.40)
1 14.5 oz can of Diced Tomatos with Garlic & Onion ($1.49)
1 15 oz can of Black Beans ($0.99)
Cook the rice according to package directions. When the rice has about 10 minutes remaining until done, in a seperate medium saucepan bring the diced tomato to a simmer over medium low heat. Gently rinse the black beans in a colander under cold water and add to the tomatos. Stir and simmer gently to mix and heat throughout. Serve the tomato/bean micture over the rice.
Extremely easy, hearty and inexpensive. I often add a leftover or two to the tomato bean mixture such as corn or some pre-cooked zucchini or diced chicken etc. Endless possibilities to add your own ingredients and seasonings.
