EASY CHICKEN ADOBO

1 whole chicken, cut up into 8-10 pieces
8 cloves garlic, smashed & peeled
1 large onion, sliced
3 bay leaves, whole
1/4 cup apple cider vinegar
1/2 cup soy sauce
2 tablespoons dark soy sauce
1 teaspoon freshly cracked black pepper
1 cup water
2 medium sized potatoes, cubed 1 inch
Salt, to taste

Place all the ingredients above, except for the potatoes and salt, and bring to a boil. Turn the heat down to medium and braise until chicken is tender (40 minutes). Add the potatoes and adjust the seasoning with more salt if needed. Cook for another ten minutes until potatoes are tender.

SERVE WITH:
Steamed rice
Steamed Broccoli
