Open Face Turkey Burger w/Gruyere, Mushrooms & Arugula

20 oz ground dark turkey($1.68–on super ad special)
6 tablespoons olive oil-divided ($.30)
1 teaspoon salt
½ teaspoon pepper
4 slices country style bread ($.60)
Mayonnaise

8 ounces mushrooms, sliced ($2.00)
2 shallots, sliced ($.50)
2 large garlic cloves, chopped ($.10)
4 thin slices Gruyere cheese ($2.50)

2 teaspoon white wine vinegar ($.10)
2 cups thinly sliced arugula ($2.00)

Mix turkey, 1 tablespoon oil, salt and pepper in medium bowl. Shape into 4- ½ inch thick patties. Place 1 toasted bread slice on each of 4 plates. Spread each with mayonnaise.

Heat 3 tablespoons oil in large skillet over medium-high heat. Add mushrooms, shallots and garlic; sauté 4 minutes. Season with salt and pepper. Remove to bowl and keep warm. Add turkey patties to skillet, cook until almost done, top with cheese. Continue cooking until done.

Meanwhile, whisk vinegar with 2 tablespoons oil, add salt and pepper. Mix with arugula.

Spoon mushrooms onto bread; top with patties and arugula salad. Serve with a sharp knife.
