4-8 chicken thighs (depending on size), de-boned & de-skinned
2 - 14 oz Silver Floss Bavarian Style sauerkraut, drained
3/4 - 1 cup 1000 Island dressing, depending on consistency.
Swiss cheese slices (1 per chicken thigh)
In a large, deep skillet:
Baste chicken thighs in 1/2 cup water until cooked. Remove chicken and drain.
Add sauerkraut and dressing. Heat to simmering.
Add chicken, heat through & top with Swiss cheese. Cover until cheese is melted.
Serve with tossed salad.
This entire meal for 4 is approximately $7.50 and takes only 15 minutes!
I created this idea years ago, as a sandwich. I loved Reuben sandwiches, but couldn’t afford corned beef. Now that I rarely eat breads, I made the sandwich into a meal. It’s easy, healthy and yummy!
