Premade pie crust
3 cup chopped fresh spinach
3 pieces bacon, cooked (I use the precooked one to save time)
4 oz. sliced cremini mushroooms
3 eggs
1 c. milk
1 Tbls Dijon mustard, pepper to taste
3-4 oz. swiss or Gruyere cheese, shredded
Sautee the spinach and mushrooms in a little olive oil. Put into an uncooked crust, first the cheese, then the sauteed vegetables and cooked crumbled bacon. Then blend the eggs, milk and mustard and pepper and pour the custard into the pie crust. Bake at 375 degrees for 40-45 min. Eat with a fresh salad or sliced tomatoes on the side. This is very rich and filling!
