Apple Cake

Ingredients:
(for cake)
300 g. flour (about 2 c.)
125 g. butter (about 8 TBSP.; 1/2 c.)
1-2 eggs, gently beaten
100 g. sugar (1/2 cup)
2 tsp. baking powder
2 apples

(for crumble topping)
flour
butter
sugar
cinnamon

Step 1.
In large bowl, mix flour, sugar and baking powder. Add butter in slices.



Then start to work together into a dough by hand.



Add egg(s) and continue kneading until you can make a nice ball of dough.



Step 2.
Grease a springform pan. Then press the dough evenly into the pan along the bottom and sides.



Poke the dough with a fork along the bottom and sides.



Step 3.
Slice the apples as thin as you can. Arrange them in a fan around the bottom of the pan, gently pressing the slices into the dough.



Step 4.
Make a crumble topping by mixing flour, sugar, and butter together. The trick here is to go by feel. Start with about 1/2 cup flour, 1/2 cup sugar, and 4-5 TBSP butter. Add several shakes of cinnamon. Test by taste and consistency until you can create nice crumbles that stick together.

Sprinkle evenly on the top of the cake.



Step 5.
Bake at 350°F for about 50 minutes, until golden brown.



Best served with schlag (whipped cream), but also good with vanilla ice cream. Or of course, with nothing at all.
