Apple Pear Walnut muffins

Ingredients:
(for 12 muffins)
2 c. flour (I used 1 c. whole wheat, 3/4 c. white, 1/4 c. ground flax seed)
1/2 c. brown sugar
1 TBSP baking powder
1/2 tsp. salt
1/2 (0r more) tsp. cinnamon
1 pear (I used Asian pear)
1 apple (I used Honeycrisp apple)
1/2 cup walnuts
3/4 c. milk
2 TBSP oil (I used canola)
1 large egg

Step 1.
Mix together flours, sugar, baking powder, salt, and cinnamon in a large bowl.

Step 2.
Chop pear and apple into small cubes. It should yield about 2 cups.



Chop and toast walnuts. I recommend toasting 3 to 5 minutes.



Step 3.
Stir in fruit and nuts into flour mixture, until everything is evenly coated.



Step 4.
Wisk together milk, egg, and oil. Pour into dry ingredients and stir to blend.

Step 5.
Spoon batter into lined muffin tin.



Bake for 15 minutes, until just golden on top. The muffin tops should spring back lightly when touched. Cool on wire rack.
