2 cups green lentils ~$1
2 cups white rice ~$.50
4 cups cold water FREE
1 dozen corn tortillas $.33
1/3 lb good bacon $1.75
1 bay leaf <$.01
3 Tbs curry powder ~$.05
Salt to taste <$.01
Total: ~$3.65
Preheat oven to 380 degrees F
For the Lentils:
Soak overnight in water just to cover. Simmer in same water with a pinch of salt (you probably need to add more) to cover, approximately one hour, or until, as Chef Andres would say, "until they tell you they are ready."
For the Rice:
Place rice, water, bay leaf, and a pinch of salt in ovenproof pot with a lid. Put on stove on high, uncovered, until water comes to a boil. Cover, and put in oven 18 minutes. Remove bay leaf before serving.
For the Bacon/curry:
Now for the flavor. Cut bacon into centimeter cubes. Heat heavy-bottomed pan on medium-high heat, stirring regularly until crispy. Add curry powder, stir until paste forms. Add bacon/curry to lentils, stir and set aside.
For the tortillas:
Wrap in paper towel, place on microwave-save plate and blast for 40 seconds.
