Eggs
Asparagus
4 medium yukon gold potatoes)
2 Tablespoons oil
4 Tablespoons parmesan cheese
pepper
Parboil, slice, and fry potatoes
Cut asparagus into 2" pieces, add to potatoes and saute briefly
Scramble eggs, pour on top and cook with lid on low heat until set.
Sprinkle parmesan cheese and add pepper to taste.
A side salad can be made for free (except salt and sugar) with miner's lettuce and arugula that self seeds in my yard every year, dressed with meyer lemon juice from my tree, and a sprinkle of sugar and a sprinkle of salt.
