2-15oz cans diced tomatoes with chiles (can add a can of chiles separately)
3.5 cups vegetable broth
1-15oz can refried beans
1-15oz can black bean (drained and rinsed)
1-15oz can corn (drained)
2 Tbsp chopped fresh cilantro, (or 1 tsp dried)
Add everything to a medium saucepan and heat through.
This is so simple it's hard to believe that its SO GOOD. I could eat this every day! And on top of how good it tastes, it is exceptionally healthy -- low cal, low fat, high fiber.
