Ramen with Scallop Ragout (only $6.95!!)

Ingredients:
2 packs Ramen noodles $.34
1/2 Red Onion, Small diced $.20
3 Cloves Garlic, Minced $.10
3 Roma Tomatoes, Diced $.61
6oz Button Mushrooms, Sliced $1.87
3/4 bunch Spinach, Stemmed and washed $1.75
8oz Scallops $2.00
1oz Olive Oil $.02
2oz White Wine $.05
Salt & Pepper to taste $.01

-Prepare noodles as per package directions but do NOT use the seasoning packet. Strain and reserve.
-While noodles are cooking, heat a large saute over high heat.
-Add olive oil, onions, and garlic. Sweat until onions are translucent.
-Add scallops, tomatoes, mushrooms and white wine. Cook until mushrooms have darkened.
-Add spinach. Cook until wilted.
-Salt and pepper to taste.

Serve immediately over cooked, strained noodles. Enjoy!

Scallops may be omitted for a vegetarian dish, or substituted with cubed chicken.
