1 small bag organic Baby Spinach ($3.00)
1 can of organic Chick Peas ($1.25)
2 Tablespoons Olive Oil (staple)
1 small organic white onion ($1.00)
1 can of organic diced tomatoes ($1.00)
Basmati Rice (4 servings $0.86)
Total = $7.11
Cook Basmati Rice according to directions set aside; Put fresh baby spinach into food processor and finely chop (it will look like parsley); In large skillet heat olive oil and saut� one diced onion until onion starts to soften; mix in the finely chopped spinach to olive oil and onion mixture to absorb the flavors; then add 1 can of chick peas and 1 can of tomatoes; keep all in skillet until ingredients are heated through. Pour heated mixture into cooked rice and mix thoroughly and serve.
