Ingredients:
2 cups flour (I used 1-3/4 cups white because I'm out of whole wheat, plus 1/4 cup flax seed meal)
3/4 cups sugar
3 TBSP. buttermilk powder
1-1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 tsp. orange extract
3/4 cup water
1 egg
2 TBSP. oil
2 cups whole cranberries
1. Preheat oven to 350°F.
2. Combine all dry ingredients, then stir in wet ingredients and add cranberries, until all blended.
3. Pour into greased loaf pan, and bake for 50-60 minutes, or until tester comes out clean.
The top of the loaf should be lightly brown, and sound slightly hollow when tapped. It should look like a good muffin top.
