Mjadra - a Lebanese family favorite.

Ingredients are: 1 large onion, chopped
2 T olive oil
1 1/2 t salt (more or less to taste)
1 cup lentils (rinsed)
1 cup brown rice
5 cups water

Heat oil in large pot, add onions and cook, stirring frequently. Let them get very, very brown (this adds to the flavor.) When onions are thoroughly cooked, add salt, water, lentils and rice. Bring to a boil, cover and simmer 40 minutes. Serve with sliced fresh pita bread.
