1 C Dry green lentils
2 C White Rice
2 large yellow onions
3-4 T olive oil
1 small container plain yogurt
In a medium saucepan, boil lentils until softened. Strain. Put 2 cups rice in 4 cups boling water. Just measure the water in the same dry measuring cup as the rice. Add the lentils at this time. Cook until rice is done, 10-15 minutes. While rice cooks, slice onions and sweat in oil. Heat on low until the edges of the onions are blackened and the onions have shriveled a bit. Plate the rice, drizzle the onion flavored oil on top, sprinkle onions on top. Put a dollop of yogurt on the side. Add salt to taste. Delicious, hearty, and well well under $10.
