Onion ,Ham and spinach quiche

One pizza crust *recipe follows
One can spinach
4 oz ham minced
3 large onions sliced thin
one can evaporated milk
one evaporated milk can of water
4 eggs beaten
parmesan cheese

garnish
1 tomato
4 lettus leaves
balsamic vinegar

make pizza crust
one teaspoon dry yeast
1/3 cup warm water
4 cups flour
2 teaspoons salt
2 tablespoons olive oil
1 cup warm water

1.Mix yeast in 1/3 cup warm water. Let sit until it bubbles up. Add the flour oil, and salt. And 1 cup of warm water . Mix /kneed well let rise until double in bulk.

2.While waiting put 1 teaspoon oil in fry pan and on LOW heat cook the onions until light brown (Not tan but a nice brown color) this will take a while. Stir often!

3.Lightly grease a 9x11 pan and set aside.

4.Mix the evaporated milk with an equal amount of water. Add beaten eggs.

5. Drain the spinach and mix it with half of the milk mixture

6. Punch down the dough and roll out to fit the pan don’t forget up the sides. and flute to make it look nice. You may have extra dough it will freeze well and can be used to make individual pizzas for a lunch.

7.put spinach mixture on dough and smooth it out.

8. Place cooked onions on top

9/ sprinkle with ham

Pour remaining milk mixture over all

11. Sprinkle with parmesan cheese

12. bake at 325 for 45 minutes or until a knife comes out clean.

Let set a few minutes

Put sliced tomatoes on lettuce leaf and drizzled with balsamic vinegar on plate and serve the quiche.
